Tomato Mozzarella Pesto Crostini

Ingredients
  • ½ baguette
  • 24 cherry tomatoes
  • ½ cup pesto
  • 1 cup Black Diamond Mozzarella, grated
  • handful fresh basil
  • salt and pepper to taste
Preparation
  1. Preheat the oven to 350°F.
  2. Slice the baguette on a diagonal to ensure maximum surface for toppings.
  3. Over each slice drizzle olive oil and sprinkle salt.
  4. Arrange the slices in a single layer on a cookie sheet and toast until golden, around 7-9 minutes.
  5. Slice tomatoes in half lengthwise.
  6. Place in a single layer on a cookie sheet and then drizzle olive oil and sprinkle salt. Roast for 15 minutes or until the tomatoes have become wrinkled and soft.
  7. Spread a nice thick layer of pesto across each crostini. Place a piece of Black Diamond Mozzarella cheese on top.
  8. Broil for 1-2 minutes or until cheese has melted and is oozing.
  9. Remove from broiler and top with the warm tomato halves, sprinkle with salt and pepper, and finish with a garnish of basil (chopped or whole small leaves).

How does one determine how much cheese is needed? Here’s a rough guideline to help with cheese counts: If entertaining with other foods: 45-60 g per person; If it’s just wine and cheese: 120 g per person; If including a platter of hors d’oeuvres, pate, cold cuts, or salads: 60 g per person;   To help get a better sense of portion sizes, a 1” cube of cheese is about 30 g.
